1️⃣ Prepare the Beef:
Heat vegetable oil in a large pot over medium-high heat. Add the beef slices and cook until browned on all sides. Remove the beef and set it aside.
2️⃣ Sauté the Aromatics:
In the same pot, add a little more oil if necessary. Add the onion, garlic, and ginger. Sauté for 4–5 minutes, or until the onion is softened and fragrant.
3️⃣ Add the Spices:
Stir in the curry powder, turmeric, cumin, cinnamon, and sliced chilies. Cook for 1–2 minutes until the spices become fragrant.
4️⃣ Add the Liquid:
Pour in the coconut milk and beef broth, stirring well to combine. Add the fish sauce, soy sauce, and brown sugar, if using. Bring the soup to a simmer.
5️⃣ Simmer the Soup:
Return the browned beef to the pot. Cover and simmer for 30–45 minutes, or until the beef is tender and the flavors have melded together. Taste the soup and adjust with more salt, pepper, or soy sauce if needed.
6️⃣ Cook the Rice Noodles:
While the soup is simmering, cook the rice noodles according to the package instructions. Drain and set aside.
7️⃣ Assemble the Soup:
To serve, place a portion of cooked rice noodles into each bowl. Ladle the hot coconut beef curry soup over the noodles.
8️⃣ Garnish & Serve:
Garnish with fresh cilantro, green onions, and slices of lime for a refreshing contrast. For added heat, garnish with extra sliced red chilies.
🍴 Tips & Variations
Vegetarian Version: Swap the beef for tofu or chickpeas for a vegetarian version of this soup.
Adjust Spiciness: The chilies can be adjusted based on your spice preference. You can remove the seeds for a milder heat.
Noodles: You can also try other noodles such as egg noodles or udon, but rice noodles give it a nice texture that absorbs the soup’s flavors beautifully.
