Herbed Grilled Trout with Lemon Rice & Cherry Tomato Salsa

๐Ÿ”ฅ Instructions
1๏ธโƒฃ Prepare the Trout:
Preheat your grill or grill pan to medium-high heat.
In a small bowl, combine olive oil, lemon juice, parsley, thyme, garlic powder, salt, and pepper.
Rub this herb mixture evenly over both sides of the trout fillets.
Grill the trout for 4-5 minutes on each side, or until the fish is cooked through and easily flakes with a fork.
2๏ธโƒฃ Make the Lemon Rice:
Rinse the rice under cold water until the water runs clear.
In a medium saucepan, bring 1 1/4 cups of water to a boil. Add a pinch of salt, olive oil, and rice.
Cover, reduce the heat to low, and simmer for 12-15 minutes, or until the rice is tender and the water has been absorbed.
Stir in the lemon juice and lemon zest. Fluff the rice with a fork and set aside.
3๏ธโƒฃ Prepare the Cherry Tomato Salsa:
In a bowl, combine the halved cherry tomatoes, finely chopped red onion, olive oil, cilantro, lime juice, salt, and pepper. Toss gently to combine.
4๏ธโƒฃ Serve:
Plate the lemon rice as the base of the dish.
Place the grilled trout on top of the rice.
Spoon the cherry tomato salsa over the trout or on the side as a garnish.
